I remember when I went vegan over 7 years ago, most vegan recipes have been really fancy, with a lot of ingredients which were expensive and only available in super-duper-organic stores. I could only dream about finding a nutrition plan for vegan beginners, including all the nutritional values as macronutrients. I remember I lost a lot of weight when I went vegan.
So I made the decision to study nutrition consultation, to learn about all the important things in food and nutrients.
