This week I am trying an avocado-basil pesto.
For one serving you need:
- 1 avocado
- 1 TB coconut oil
- 1 cup basil
- 1/2 lime
- 1 small onion
- ground garlic
- pepper and salt
Pick the leaves of the basil and blend everything in your blender or kitchen machine. Taste with salt and pepper.
Combine with pasta of your choice.
One serving has the following nutritional values: 393 kcal, 16g carbohydrates, 2g sugar, 34g fat, 5g protein, 12g fiber and 61% of the daily recommended dose vitamin C.
