Quinoa and watermelon are a perfect combo, nutritious, sweet and juicy!
Quinoa is well-known as a superfood and can be combined with almost everything, even with fruits. And what is the perfect summer fruit? Watermelon of course! So why not to try a quinoa watermelon salad, now that summer is coming to an end?
For 2 servings you need:
- 280g quinoa (3/4 cup)
- 220g cubed watermelon (11/2 cups)
- 20g parsley
- zest of 1 lime
- 3 TB apple cider vinegar
- 2 TB lime juice
- 1 red onion
- 6 TB olive oil
- salt and pepper
Rinse the quinoa and cook it according to the instructions on the package (usually 1 part quinoa, 2 parts water, low heat for about 15 minutes).
Chop the watermelon and red onion into cubes. Chop the parsley. Combine cooled quinoa, watermelon, zest of the lime and parsley in a large bowl.
In a smaller bowl mix apple cider vinegar, lime juice, red onion and olive oil. Pour over the salad in the big bowl and taste with salt and pepper.
One portion of this salad has the following nutritional values: 562kcal, 37g carbohydrates, 6g protein, 8.5g sugar, 43g fat, 5g fiber and 23% of the daily recommended dose of vitamin C.
