How to make your potato salad different?
There are a lot of recipes for a potato salad, but this is the first I found containing red grapes and this idea got me hooked straight on, so of course, I had to try it. And it tastes fantastic!!!
For 4 portions you need:
- 1,5kg potatoes
- 1/2 cup vegan mayo
- 3-4 small onions
- 1 cup red grapes
- 3tbs mustard
- salt and pepper
Peel and quarter the potatoes, then boil them until they get soft (depending on how big you cut them, mine took about 40 minutes). Let cool down or speed up the process by adding iced water.
Chop the onions and half the grapes. Mix with the cooled potatoes in a large bowl.
For the dressing combine mayo, mustard, pepper and chopped dill and cilantro in a small bowl. Stir well and add to the large bowl. Taste with salt.
The salad stays fresh in the fridge for about 4 days and it is getting better every day if you allow the dressing to infuse the potatoes.
