We all have heard the expression: ‚eat the rainbow‘ so finally it was time to try a raw cabbage salad which not only looks like a pure rainbow, has an amazing mouthfeel, but also turns out to be loaded with nutrients and vitamins!
For about 4 portions you need:
- 200g green cabbage
- 200g red cabbage
- 200g turnip cabbage
- 2 carrots
- 1 lemon
- 3 oranges
- 4tbs balsamic
- 1tbs agave nectar
- 4tbs olive oil
- 1 piece of ginger (about 4cm)
- 1 garlic clove
- salt and pepper
- 1 bunch of parsley
- 60g mixed seeds
- 1/2tsp cinnamon
Wash the cabbage and remove the covering leafs, then cut it in stripes. Peel turnip cabbage and carrots and rasp on a grater. Mix in a large bowl and do not forget to use your hands to crush the cabbage since it gets way sweeter and tastier thus.
For the dressing mix the juice of one lemon and one orange, add balsamic, agave nectar, olive oil and mix through. Grate the ginger and add to the dressing as well as a squeezed garlic clove. Taste with salt and pepper and pour over the salad. Now chop the parsley add to the salad and give it a nice stir, you can use your hands again, come on play with your food!
Brown the seeds in a hot pan and blend with cinnamon.
Slice the other two oranges in filets. Before serving top the salad with slices of oranges and seeds.
