Scalloped potatoes – vegan

When I was trying this dish I was not expecting too much since the ingredients and the cooking are very simple. I am not a huge potato fan also. I was even more surprised over how much I liked this food and how cheesy and special the taste was, even if the whole process is done in 15 minutes.

For 2 portions you need:

  • 1tbs margarine
  • 2garlic gloves
  • 1tbs flour (I used spelt flour)
  • 1 cup plant milk (I used rice milk with calcium)
  • 1tsp salt
  • 1/2tsp pepper
  • 4 potatoes
  • 1tbs nutritional yeast
  • 1tbs chopped cashews
  • fresh herbs


Preheat your oven to 175 degrees Celsius. Now peel the potatoes and cut in even slices. Place in two small baking dishes.

Melt the margarine in a small pot. Add chopped garlic, flour, plant milk, salt and pepper, one thing at a time, boil up while stirring and stir until it becomes a thick sauce. Cover potatoes with the sauce and sprinkle with nutritional yeast and chopped cashews.

Bake for about 60 minutes. Decorate with fresh herbs before serving.

One portion of this gratin has the following nutritional values: 332 kcal, 47g carbohydrates, 7g sugar, 12g fat, 10g protein and 4g fiber.
