Spicy rice noodle salad – vegan

This salad is really simple and does not take a lot of time. Plus it is very light and ideal for a snack, diet or whatever is going on in your life. If you would like to skip the noodles, I already have a very light Asian salad if you click here.

You can also make it gluten free by using gluten-free soy sauce. 

For 3-4 portions you need:

  • 100g rice noodles
  • 3 carrots
  • 250g cucumber
  • 3 spring onions
  • 1tbs ginger
  • 1 lime
  • 1/4tsp chili powder
  • 4-6tbs soy sauce
  • 3tbs peanut oil
  • salt
  • pepper


Peel carrots and cucumber and cut in thin slices. Wash the spring onions and cut into rings then cut and grate ginger.

For the dressing mix the juice and the peel of the lime with soy sauce, peanut oil, ginger, chili powder, and onions.

Cook the rice noodles according to the instructions. Finally, mix the hot noodles with the veggies and the dressing. Taste with salt and pepper.

One portion of this salad has the following nutritional values: 246 kcal, 31g carbohydrates, 1,5g sugar, 12g fat, 2,5g protein, 1,25g fiber and 23% of the recommended daily dose of calcium.
