There is one special treat that gets me every time. I just can not resist it, it is like an addiction! Every time a see a recipe for brownies, I have to modify it into a vegan version. Here we go this month with a chunky macadamia style brownie.
For about 12 pieces you need:
- 2tbs ground flax seeds
- 120g dark vegan chocolate
- 7tsp cocoa powder
- 3/4tsp salt
- 180g xylitol (I used Xucker, but you can use the same amount of sugar instead)
- 100g margarine
- 1/4tsp baking powder
- 1 1/2tsp vanilla extract
- 150g spelt flour
- 70g macadamia nuts
Preheat your oven to 180 degrees Celsius. Grease a large baking pan. Soak flax seeds in 3tbs water and let swell fo about 10 minutes.
Chop the chocolate into pieces and mix them with cocoa powder and salt in a mid-sized bowl then add 70ml boiling water and stir with a whisk until it gets smooth.
Add flax seeds, xylitol (or sugar), margarine, baking powder and vanilla extract and give it a nice stir.
Finally add flour and then macadamia nuts, whisk one last time and then spread over the baking pan. Bake for about 25 minutes. Let the brownies cool down before cutting.
One brownie has the following nutritional values: 256 kcal, 30,67g carbohydrates, 6,92g sugar, 3g protein, 15,42g fat and 2,33g fiber.
