Creamy zucchini coriander soup – vegan

Green is the color of peace, rest, and universal love, this soup is full of it! It comes with a lot of health benefits supported by the magical power of coriander. Coriander is not only good for the skin, cholesterol level, and digestion, it also keeps the bones healthy and protects the eyes from conjunctivitis. So let’s start to create this little miracle! 

For 2 portions you need:

  • 3 zucchini
  • 1 onion
  • 2 potatoes
  • 1 garlic clove
  • 1/2 celery stick
  • 1/2tsp turmeric
  • 750ml vegetable broth
  • 1/2 bunch of coriander
  • salt and pepper
  • oil


Peel zucchini, potatoes and onion and cut in cubes. Chop the celery. Sweat everything in a large pot with some oil then add turmeric, salt, and pepper. Fill up with vegetable broth and let cook for 10 minutes on low heat.

Throw in the coriander and blend with a hand blender.

Add any spices according to your taste.

One portion of this soup has the following nutritional values: 166kcal, 8,5g protein, 26,5g carbohydrates, 12,5g sugar, 4g fat, 7g fiber, 48,5% vitamin A and 169,5% vitamin C.
