I really love sushi but it is hard to take it with you, so what about rolling your sushi into a wrap what makes it easier to go and even more filling!
You need (4 pieces):
- 200g sushi rice
- 1 pinch of sugar
- 2tbs vinegar
- 2-3tbs plant-milk
- 2cm wasabi paste
- 2 large tortilla wraps
- 2 nori leafs
- 2tbs lime juice
- 1 avocado
- 1/4 cucumber
Wash and boil the sushi rice according to the instructions. Mix sugar and vinegar until the sugar dissolves and add into the finished rice, give it a good stir.
Wash the cucumber and cut it into sticks.
Mix plant-milk and wasabi paste and spread it over the wraps, cover with a nori leaf and cut the edges into the right shape.
Mash the avocado with lime juice and salt.
Spread the sushi rice over the nori leaf, cover with avocado paste. Place the cucumber sticks onto the lower third of the wrap and roll up carefully by pressing tightly. You can use a sushi mat for guidance. Fix with toothpicks if necessary.
Half the wraps before serving, so they are easier to eat.
