Okay, V-day is about to be here on Tuesday. Some people like to spend a lot of money on fancy presents, some like to go on a romantic trip, I like to bake. You put all your love and skills by using your hands and heart to create something tasty and beautiful. If that is not love I do not know what is.
This time I wanted something light and not too sweet. So I have chosen lemon tartlets.
For 24 tartlets you need:
- 400g puff pastry (6 sheets)
- 2 lemons
- 50ml water
- 100ml soy milk
- 130g xylitol (I used Xucker, you can use the same amount of sugar instead)
- 40g corn flour
- 60g margarine
- berries or mint leafs for decoration
Remove the puff pastry from the package so it can defrost.
For the filling mix the peel and the juice of 2 lemons, soy milk, and xylitol in a small pan. In a small bowl blend water into corn flour until it becomes a paste. Now stir the paste into the lemon-mix and boil it up briefly while adding the margarine and bringing it to melt. Then remove it from the heat. Let cool down.
Cut circles out of the puff pastry by using a glass and place the circles in a greased muffin pan. Put one table-spoon of the filling on each pastry circle and bake for about 20 minutes on 180 degrees Celsius.
Let cool down before removing from the pan and decorating with berries or mint leafs.
One tartlet has the following nutritional values: 135kcal, 8g fat, 15g carbohydrates, 1g sugar, 1,4g protein and 0,7g fiber.
