This baked peppers can be taken to fill pita bread with falafel or hummus, but also as a starter on their own. They are super fast and easy and thus ideal for fast hunger or an unexpected visitor.
To fill 4 pita bread you need:
- 200g small green peppers/pepperoni
- 1/2tsp sweet red paprika powder
- 1 pinch of cayenne pepper
- 1tsp salt
- 2tbs olive oil
- garlic powder (optional)
- pita bread/hummus/falafel (optional)
Preheat your oven to 220 degrees Celsius and prepare a baking tray with baking paper.
Wash and dry the peppers. In a large bowl mix the peppers with olive oil and all spices (besides garlic powder). Spread them over the baking sheet and bake for 10-12 minutes until you see bubbles form on their skin and it becomes brown.
Sprinkle them with garlic powder and serve the way you choose. I stuffed them into pita bread with avocado, vegan mayo and herbs.
200g peppers prepared in this way have the following nutritional values: 307 kcal, 28g fat, 12g carbohydrates, 3g protein and 1g fiber.
