When I have been to Tel Aviv I got to try raw cauliflower rice for the first time. And I have fallen in love with it straight! Raw cauliflower is low in fat, provides carbohydrates, dietary fiber, and protein. It has a high content of vitamin C and moderate levels of several B vitamins and vitamin K. It is the perfect substitute for potatoes and rice since it can provide a similar texture and mouthfeel.
This salad serves 4:
- 1 cauliflower head
- 125g deep frozen green peas
- 1/2 bunch of parsley
- 1/2 bunch of basil
- juice of 3 limes
- 50g lettuce
- 1tbs rice syrup
- 40g of mixed seeds (sesame, pumpkin, sunflower, etc.)
- 6tbs olive oil
- salt and pepper
Blanch the peas for 2 minutes in boiling water. Pour them off and let them cool down.
Next, wash the cauliflower, clean it and grate it on a small grater. Chop parsley and basil and mix it with rice syrup, oil, salt, and pepper. Chop lettuce in mouth-righteous pieces and mix it up with cauliflower rice, peas, and the oil vinaigrette.
Sprinkle with seeds before serving.
One portion of this raw cauliflower salad contains the following nutritional values: 366kcal, 26g fat, 16g carbohydrates, 6g sugar, 12g protein, 10g fiber, 30% of the daily dose of potassium, 25% of vitamin A, 125% of vitamin C and 20% of iron.
